Easy Batter Rolls
Makes 18 rolls
3¼ cups all-purpose flour
1 package active dry yeast
1¼ cups milk
½ cup shortening
¼ cup sugar
1 teaspoon salt
1 egg
1 teaspoon poppy or
sesame seeds (optional)
In a large mixing bowl, combine
2 cups of the flour and the yeast
In a saucepan, heat milk, shortening, sugar and
salt, till warm (105º to 115º F) and shortening is
almost melted, stirring constantly
Add to flour mixture, add egg
Beat at low speed of electric mixer
for ½ minute, scraping bowl
Beat 3 minutes at high speed
Add remaining four, beat at low speed
About 2 minutes or till batter is smooth
Seal bowl, let rise in warm place
till doubled (about 1 hour)
Beat down with a wooden spoon
Let rest 5 minutes
Spoon into greased muffin cups, filling each half full
Cover, let rise till nearly doubled, (about 30 minutes)
Brush tops lightly with milk, sprinkle
With poppy or sesame seeds, if desired
Bake in 375º oven for 15 to 18 minutes
